Dubai Chocolate Cake
A decadent, delicious centrepiece for your table this festive season.

Ingredients
For the cake, you will need:
- 2 Green’s Deluxe Chocolate Mud Cake mixes
- 4 eggs
- 1 ½ cup (360ml water)
- 8 tablespoons (160g) butter, melted
For the pistachio filling:
- 40g butter
- 1 ¼ cups (120g) kaitifi pastry, cut into 2cm pieces
- ¾ cup pistachio spread
- 1 ½ tbs tahini
- pinch salt
For the icing and decoration:
- Green’s Deluxe Chocolate Icing mix
- 1 ½ tablespoons (30mL) water
- 2 ½ tablespoons (50g) butter, soft
- 1/4 cup finely chopped pistachios
Method
1. Prepare the pistachio filling: warm a large non-stick frying pan over medium heat. Add the butter and cook until it melts and begins to foam. Add the pastry and cook for about 5 mins, stirring often, until lightly golden. Remove from the heat. Transfer the mixture to a bowl and let it cool completely. When cool, mix in the pistachio spread, tahini, and salt. Set aside.
2. Prepare the cakes: according to the packet instructions. Once cooled, using a serrated knife, trim the domed tops of each cake (and keep the offcuts for cake pops or bliss balls). Place one cake on a serving plate or cake stand. Spread a thick layer of the pistachio filling. Position the second cake on top, base side up, and press gently to secure.
3. Prepare icing: to the packet instructions and spread chocolate icing on the side and top of the cake.
Sprinkle pistachios over the top for decoration. Refrigerate for about 30 mins so the filling and icing can firm up slightly. Serve.
